Smooth and Savoury Greek Hummus


I almost called this Mediterranean Hummus... Until I realized that hummus was already Mediterranean! Ha. So, Greek it is! And honestly, it's just because I used black olives and feta. That makes anything Greek, right? Right, moving on.

I love the texture that the goat feta and olives provide, and the rosemary gives it an irresistible delicate fresh earthiness. Try it for yourself!

I always use dried chickpeas and beans. Why? To reduce my carbon footprint, as well as save the big bucks (it's incredible how affordable this protein source can be!) and have the opportunity to soak and sprout my beans! I soaked them both for 12 hours with a splash of apple cider vinegar, before sprouting them. "Dry frying" the chickpeas with baking soda for 5 minutes before boiling them also drastically reduces their cook time. You can find a soak/sprout guide here! I would recommend using this method whenever you can, due to how much it helps the digestion and unlocking the nutrients of these beautiful legumes. It takes a little foresight but it's well worth the effort!

Alright, let's get this party started.

Ingredients:

1.5 cups chickpeas

.5 cup black beans

2 cloves garlic

1/3 cup tahini

1 tbsp olive oil

2 tbsp balsamic vinegar

2 tbsp apple cider vinegar (or lemon juice... honestly, I think it would be better with lemon juice)

1 tbsp organic (gluten-free) tamari or soy sauce

1/2 tbsp toasted sesame oil

3 sprigs (~1.5 tbsp) fresh rosemary (dried would probably work nearly as well!)

1 1/4 tsp garlic powder

1/2 tsp cumin

3/4 tsp salt

pepper to taste

cold water to texture (see below)

Optional toppings:

Black olives (you could put these inside the dip, as well, love the texture it provides)

Halved cherry tomatoes

Chopped cucumber

Sprinkled hunks of goat feta

Sprig of rosemary

Cracked pepper

Instructions:

1. Add the garlic cloves and rosemary to your food processor and blend until it's all chopped (and likely plastered to the sides of the processor; you know you're done when everything stops moving).

2. Add all the remaining ingredients. Blend until it's the texture of soft serve. If it's having trouble processing/getting smooth, add very cold water in small amounts until it's jiving. The water really helps it froth too, which is beautiful.

3. If you so desire, make it ultra beautiful by topping it with the above options.
