Savoury Asian Sesame Slaw


Are you looking for a savoury and satisfying addition to your summer salads? Look no further!

I love this recipe, and it keeps for so long that it is great to make a huge batch of it and then use it for all your salad needs. I have given you 5 different ways that I use it below!

Red cabbage is packed with glutamine (9x more than green cabbage!), the amino acid that feeds your intestinal cells and helps heal your gut! It is, of course, packed with vitamins, minerals, antioxidants (any food with that brilliant colour has got to be doing good things for you!), which help reduce inflammation and fight cancer. Red cabbage is also part of the cruciferous family (along with brussel sprouts, kale, broccoli, cauliflower, etc.), which contain sulfurous compounds (such as sulforaphane and indole-3-carbinol) to help with detoxification and estrogen balancing. So why not eat this on the daily?!

Note: An excessive amount of raw cruciferous vegetables may impair thyroid function in those with hypothyroidism, so keep consumption moderate and/or lightly steam the cabbage before dressing the salad if you experience hypothyroidism (and see an ND because we love treating your thyroid!).

Recipe for Savoury Asian Sesame Slaw:

1/2 Red cabbage

2-3 tbsp toasted sesame seeds

Sauce:

3 tbsp toasted sesame oil

3 tbsp organic/non-GMO soy sauce/tamari *

2 tbsp apple cider vinegar (or more if you'd like more tang!)

1 1/2 tsp garlic powder

1/2 tsp cumin

1/2 tsp salt

1/4 tsp pepper

Either mandolin, grate, or slice in a food processor (or very thinly slice if you're patient like that) the red cabbage.

Mix the sauce ingredients together in a bottle or blender.

Coat the cabbage with sauce, then toss with toasted sesame seeds. Tada! Refrigerate- this tastes way better after it has soaked up the sauce for a while.

And then....

5 Ways to Use The Slaw:

1. With shredded carrots

2. With a dark leafy green, such as spinach or arugula

3. With (sprouted, for best digestibility) beans/legumes- lentils are especially perfect!

4. With seaweed salad- I use wakame- delicious.

5. For tacos!

Or mix all the options together for a colourful medley!
