Creamy Dill Dip- Delectable and Dairy-Free!

My love for dill knows no bounds, but I find its uses somewhat minimal.  Its subtle flavour doesn’t do a whole lot in a strongly-flavoured dish (which my dishes are wont to be), but with fish or paired with creamy/sour flavours, it has its chance to shine!  And it is glorious.

 

This dip makes me incredibly happy.  I’m not going to lie, it reminds me of creamy dill chips, but less crunchy and significantly more healthy!  The beauty of tofu is that it absorbs any flavour it's drenched in, so instead of tasting like tofu this dip is refreshing, tangy, and smooth!

Ingredients:

~300g of soft/silken* organic/non-GMO** tofu

Juice of ½ lemon***

1 clove of garlic, chopped

½ tsp of garlic powder (it has a much warmer flavour than garlic, more like roasted garlic)

~1 cup/2 handfuls of fresh**** dill, torn

1 tbsp organic** tamari/soy sauce

1 ½ tbsp vinegar- either white vinegar, or apple cider vinegar

Sea salt and pepper to taste

 

Instructions:

Put all of the ingredients in your mixing apparatus (blender, food processor, cup for a hand blender).  Blend until smooth.  Refrigerate.

The longer the dip sits, the more the flavours meld.  Serve with fresh veggies for a healthy summer snack!  Enjoy!

  • * I have made it with medium, it’s just thicker and not as smooth.

  • ** It is important that you get organic, non-GMO tofu/tamari/soy sauce.  These products are made from soy.  The effects of genetically modified soy are yet to be known, and since soy is such a massive crop there are high amounts of pesticides on them.  More questions about soy safety?  I bet this article by Dr. Aviva Romm can answer them.

  • *** (You could probably use more, I just only had ½ in my fridge)

  • **** You can also use dried dill also, approximately 2-3 tbsp.

  • If you make a more fluid, “dressing”-style version of this recipe (i.e. using soft tofu, maybe adding a bit more lemon juice/vinegar), it is amazing drizzled over grilled salmon, or even mixed with salmon to make a tuna-salad-sandwich-like filling!
